What you will learn in this course:

Element performance criteria:

  1. Mixing resting and folding the cronuts dough.
  2. Mixing and resting the dougnuts dough.
  3. Using the proover to ferment the product.
  4. Rolling and cutting to size
  5. Deep frying the product.
  6. Making different topping for the product.

You will learn all the baker’s techniques, from mixing and proving to baking. And best of all, eating your own product and sharing them with special people.

Important Health and Safety Information

  • For safety reasons, you will need to be 16 years or older to attend our courses.
  • Our courses are NOT SUITABLE if you are allergic to NUTS or other food ingredients.
  • For health and safety reasons, enclosed shoes must be worn during training. Long hair must be tied back, and avoid wearing loose bracelets or bangles, keep your rings at home.
  • Casual and light clothes are suitable. As you will stand up for a long period of time,snickers or shoes with thick sole are recommended.

You will get a recipe folder and an apron for you to take home. Video recording is not permitted from either phones or other video devices but you are welcome to take as many photos as you like.


  • For a full day course, you will have a 30 minutes lunch break .
  • A dining room is provided for your breaks. Hot and cold drinks will be available free of charge. You will need to bring your own lunch or organise it from a nearby lunch bar.
  • We have ample free parking space in front of our premises. We are located just a 10 min walk from Joondalup train station, in the business park opposite the shopping centre. We encourage you to use public transport, we have a free pick up and drop off at the Joondalup train station, organise it in advance.
  • We  will not take your photo without asking for your permission first .

Apprentices and trades people working in the food preparation/hospitality industry may be able to claim attendance to our courses as a tax deduction. OMG never thought making doughnuts could be so simple and such fun. They tasted amazing and the course was great fun and best of all no dishes for me to wash.

Highly recommended, excellent class. We were a bit nervous due to our lack of experience in pastry making but Patrick is a fantastic teacher and the venue is really well set up. I felt like a master chef in no time. Our doughnuts and cronuts were delicious, and you make a lot so we were extremely popular with friends and colleagues the next day! I'm sure I could reproduce the recipes at home. I have a couple of food allergies which were catered to, which I really appreciated. All round a fantastic class.

It is so captivating how one can live a passion and pass it on the way Patrick Vuaillat does! A person of a kind, who experienced and elaborated his art of patisserie through the walks of life on international level, and yet so humble, fun, friendly, and very keen to deliver! The course of cronuts and donuts -that with no spec of a doubt- trespasses your expectations and way beyond very well established and famous names in same field. I highly recommend this course and will be looking forward to different courses with chef Patrick. Ihab.
