What you will learn in this course: 

In this course you will make a two tiers red velvet mud cake , mask it with ganache and then decorate it with a range of chocolate garnishes. If your chocolate skill need a brush up, this training is for you. 

Element performance criteria:

  1. Make and bake a two tiers red velvet mud cake  from scratch.
  2. Melt dark  chocolate.
  3. Melt dark  chocolate for modern ribbon.
  4. Make a range of chocolate garnishes – rolls, scrolls, shaving, cigarettes.
  5. Masking cakes with ganache.
  6. Make modern chocolate flowers.

This is always a popular course, so do not delay in booking! Students will take home their products. Recipe book and apron will be provided at the beginning of the course, for student to keep.

Important Health and Safety Information

  • For safety reasons, you will need to be 16 years or older to attend our courses.
  • Our courses are NOT SUITABLE if you are allergic to NUTS or other food ingredients.
  • For health and safety reasons, enclosed shoes must be worn during training. Long hair must be tied back, and avoid wearing loose bracelets or bangles, keep your rings at home.
  • Casual and light clothes are suitable. As you will stand up for a long period of time,snickers or shoes with thick sole are recommended.

You will get a recipe folder and an apron for you to take home. Video recording is not permitted from either phones or other video devices but you are welcome to take as many photos as you like.


  • For a full day course, you will have a 30 minutes lunch break .
  • A dining room is provided for your breaks. Hot and cold drinks will be available free of charge. You will need to bring your own lunch or organise it from a nearby lunch bar.
  • We have ample free parking space in front of our premises. We are located just a 10 min walk from Joondalup train station, in the business park opposite the shopping centre. We encourage you to use public transport, we have a free pick up and drop off at the Joondalup train station, organise it in advance.
  • We  will not take your photo without asking for your permission first .

Apprentices and trades people working in the food preparation/hospitality industry may be able to claim attendance to our courses as a tax deduction. Done the Chocolate Fantasies. Had lots fun on making chocolate garnishes. Patrick is so nice and have lots passions of teaching us how to get to the final product. I strongly recommend Patrick’s Sweet Artist Academy to people who want to have fun and also learn Pastry skills. I would love to go back do some other course like sugar pulling or blowing.

Going into a Chef Patrick’s course you know you will come out with valuable knowledge and culinary techniques, and in this case Chef Patrick even surpassed my high expectation. It was wonderful to learn from such a talented chef and great teacher who spared us no detail when it comes to technique and flavour. All questions were answered down to the tiniest details and many tips and tricks were shared. I want to thank Chef Patrick for a truly great course. I strongly recommend this it!
