What you will learn in this course:

In this course students will familiarise themselves with all the basic aspects of cake decorating using fondant, also known as plastic icing or RTR (Ready to Roll) and Royal icing. For this course, as the focus is not on the cake but the decor itself, we will use two tiers foam cakes.

The decor techniques you will learn will be based around commercial cake decorating, not hobby cake decorating. For example, roses will only take you 5 minutes each to make without cutters, compared to the more complex flowers made using cutters and petals one at the time, which is very time consuming and commercially not practical. The idea is that you can make the cake at a commercial standard, in a relatively reasonable time and achieve a profit, based on the time it took you to make your masterpiece.

Element performance criteria:

In this course the student will learn to roll out icing, decorate a two tiers foam cake with a lot of different techniques used in cake decorating.

Some of the techniques involved will be:

  • Rolling icing.
  • Covering the foam cakes with Plastic icing and royal icing.
  • Using a crimper for border’s decorating.
  • Making icing drapes to place around the cake.
  • Making paper piping bags, piping filigrees with royal icing around the cake.
  • Piping large icing borders with piping bag.
  • Making roses and leaves for the cake.
  • Using the air brush to shade parts of the cakes.

  • All the tools will be available for each student to use, there won’t be a need to buy any tools.

Important Health and Safety Information

  • For safety reasons, you will need to be 16 years or older to attend our courses.
  • Our courses are NOT SUITABLE if you are allergic to NUTS or other food ingredients.
  • For health and safety reasons, enclosed shoes must be worn during training. Long hair must be tied back, and avoid wearing loose bracelets or bangles, keep your rings at home.
  • Casual and light clothes are suitable. As you will stand up for a long period of time,snickers or shoes with thick sole are recommended.

You will get a recipe folder and an apron for you to take home. Video recording is not permitted from either phones or other video devices but you are welcome to take as many photos as you like.


  • For a full day course, you will have a 30 minutes lunch break .
  • A dining room is provided for your breaks. Hot and cold drinks will be available free of charge. You will need to bring your own lunch or organise it from a nearby lunch bar.
  • We have ample free parking space in front of our premises. We are located just a 10 min walk from Joondalup train station, in the business park opposite the shopping centre. We encourage you to use public transport, we have a free pick up and drop off at the Joondalup train station, organise it in advance.
  • We  will not take your photo without asking for your permission first .

The course was brilliant. I learnt so much in one day and Patrick was very obliging by answering my many questions. Patrick’s demos were fantastic and I was pleasantly surprised by the beautiful roses, draping, rope and piping I learnt to make. Cake decorating is passion of mine and I now have the confidence to take it further. Thanks so much Patrick.

I had thought about doing a cake decorating class for a while and I’m glad I finally did. Patrick was an amazing teacher who broke each technique down and went through everything step by step. The class was a good length of time to be able to pick up each technique. I came from having no experience at all to learning some fantastic beginner techniques to get me started. Patrick is a really nice teacher, very approachable and there was no question too silly for him to help me with and he also had a great sense of humour! I’m looking forward to doing another class 🙂

Amazing course - learnt a lot, great tips that you cannot get from reading a book or watching videos! Patrick was amazing - even my own personal photographer for the day so that I had plenty of photos to look back on
